"A holistic approach to health considers not just the physical body but also the emotional, mental, and social aspects of our lives." - Dr. Andrew Weil
You know that feeling when you just want something fresh and light, but also super delicious? That’s exactly where I was the other day when I looked out at my garden and thought, “Let’s make something amazing out of this!” So, I rushed out to our garden and started grabbing my favorite ingredients for the most perfect summer salad!
Whether you're hosting a summer barbecue, packing a picnic, or just looking for a quick and healthy lunch, this Peach Salad with Honey Vinaigrette fits the bill. It’s light yet satisfying, and it’s so easy to prepare that you’ll find yourself coming back to it again and again. Trust me, my family is obsessed!
Health Benefits in Every Bite
Beyond its deliciousness, this salad is packed with nutrients. Peaches are a great source of vitamins A and C, which are fantastic for your skin and immune system. Avocado brings in healthy fats that support heart health and keep you feeling satisfied. And let’s not forget the greens—loaded with fiber and antioxidants, they’re the foundation of any nutritious salad.
Heres what you'll need:
6 cups spring mix lettuce
3 peaches, sliced
1 cup blueberries
1 avocado, sliced
½ small red onion, thinly sliced
½ cup crumbled feta
½ cup chopped pecans
½ cup olive oil
⅓ cup honey
2 tablespoons apple cider vinegar
2 tablespoons lemon juice
1 teaspoon dijon mustard
½ teaspoon salt
How To Make This Yummy Salad:
Add all of the ingredients for the salad to a large bowl.
In a small bowl or jar, whisk together the dressing ingredients until emulsified (fully mixed & thickened).
Drizzle the dressing over the salad and toss. Use as much of the dressing as preferred.
Why This Salad Rocks
Honestly, this salad is now my go-to for summer. It’s light, refreshing, and packed with flavor. Plus, it’s super quick to make, which is a win in my book. Whether you’re having friends over, need something easy for lunch, or just want to treat yourself, this salad hits the spot every time.
And seriously, the fact that it’s made with stuff from the garden makes it taste even better. So next time you’re craving something fresh and yummy, give this salad a try—it’s like summer in a bowl!
