Last night, we had an amazing dinner that I just have to share with you. We made these incredible Chipotle Shrimp Tacos with Avocado Mango Salsa, and they were so good that I had to double the recipe because everyone, including me, went back for seconds! The combination of smoky chipotle shrimp, creamy and tangy lime sauce, and refreshing avocado mango salsa created a perfect harmony of flavors. If you're looking to spice up your taco night, this is the recipe you need. Let me take you through the steps to make these delicious tacos that will surely become a new favorite in your home too!
1 lb. (450g) shrimps, peeled & deveined
2 tbsp. extra-virgin olive oil, divided
4 tbsp. shallots, finely chopped
1 tsp. chipotle chili powder (or sub with chili powder mixed with a pinch of cayenne powder)
1 tsp. smoked paprika
¾ tsp. ground cumin
½ tsp. garlic powder
½ tsp. sea salt
4 tbsp. Greek yogurt
1 tbsp. fresh lime juice
2 tbsp. fresh cilantro, finely chopped
1 avocado, diced
1 mango, diced
1 jalapeño, seeds removed, finely diced
2 tbsp. cilantro, chopped
Zest & juice of 1 lime
Pinch of sea salt
8 corn tortillas, warmed
Step 1: Marinate the Shrimp
Pat the shrimp dry with a paper towel and place them into a large bowl. Add 1 tablespoon of olive oil, shallots, chipotle chili powder, smoked paprika, cumin, garlic powder, and salt. Mix well to combine and set aside to stand for 10 minutes. This allows the shrimp to absorb all the smoky and spicy flavors.
Step 2: Prepare the Salsa
While the shrimp is marinating, prepare the avocado and mango salsa. In a medium bowl, combine the diced avocado, mango, jalapeño, cilantro, lime zest, lime juice, and a pinch of sea salt. Stir gently to combine, ensuring the ingredients are evenly mixed. Set aside.
Step 3: Cook the Shrimp
Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp mixture and arrange it in a single layer. Cook the shrimps for 2-3 minutes on each side, until they become opaque and slightly charred. Transfer the cooked shrimp to a plate.
Step 4: Make the Lime Sauce
In a small bowl, combine the Greek yogurt, lime juice, and finely chopped cilantro. Mix well until smooth. This sauce adds a creamy and tangy touch that balances the heat from the shrimp.
Step 5: Assemble the Tacos
To assemble your tacos, start by spreading a light layer of lime sauce on each warm tortilla. Top with a generous portion of chipotle shrimp, and then spoon over the avocado mango salsa. For an extra burst of flavor, drizzle with additional sauce and sprinkle with more cilantro, if desired.
Shrimp: Refrigerate leftover shrimp in an airtight container for up to 2 days.
Sauce and Salsa: Store the leftover lime sauce and salsa separately in airtight containers for up to 3 days.
